Macaroni and Cheese

(since my mother-in-law is here, I thought I'd have her write the recipe!)

You will need:
12 oz macaroni (any type)
1 cup cottage cheese
1/2 cup sour cream
Lots of grated cheese (sharp cheddar, or cheese of your choice)
1 egg
1 tsp salt
1 tsp pepper

Topping:
2 cups bread crumbs
1 stick butter or margarine, melted
1 cup shredded cheese

Boil pasta according to package directions but do not cook all the way through (al dente.) Mix other ingredients; stir into drained pasta. Place in greased casserole dish. Mix topping ingredients; spread on top. Bake at 350ยบ for thirty minutes or until brown and crisp.

Update:My mother notes that the amount of breadcrumbs seems excessive. Feel free to cut down the topping ingredients by half.

side note (Bernadette): When I was growing up, I thought that macaroni and cheese was just that— macaroni with grated cheese on top. Boy, was I wrong!
